Peach and Strawberry Soda



Ryan’s parents were stopping by our place for the first time on their way up to the Sacramento delta. I was making them dinner, but I also wanted to make a special drink to be refreshing, and of course non-alcoholic.  I looked through my bookmarked recipes and I had all of the ingredients for this one, so that is always perfect.


This soda was actually a refreshing surprise and I couldn't believe how good it tasted. My fruit was fresh from the farmer's market, so that made the drink even better.


PEACH AND STRAWBERRY SODA - Makes 5 cups

Ingredients:
2 cups water
1 cup sugar
1 cup (6 ounces) frozen and thawed peaches (preferably with no sugar added) or 2 fresh peaches, peeled and pitted
1 cup (6 ounces) frozen (preferably with no sugar added) and thawed or fresh strawberries
1/4 cup fresh lemon juice (from 1 large lemon)
1 teaspoon lemon zest (from 1/2 large lemon)
About 1 cup sparkling water (depending on how sweet or sparkling you want it)
Ice

Directions:
In a small saucepan, bring the water and sugar to a boil over medium-high heat, stirring constantly, until the sugar has dissolved, 2 to 3 minutes. Set aside to cool for 20 minutes. You can also make this a few hours ahead of time and refrigerate until ready to use. 

In a blender, combine the cooled syrup, peaches, strawberries, lemon juice, and lemon zest. Blend until smooth. Add the sparkling water and pour into an ice-filled pitcher.
