Meatloaf

I love comfort food with a little twist. The topping on this meatloaf is subtly sweet and overall delicious.

 Put all the meat loaf ingredients in the bowl.

Mix and form into loaf.

Top with topping mixture.

Place in oven for an hour.

After ten minutes the entire kitchen smells like a warm loving kitchen ready to hug you.

Because I love balanced meals, I like to serve this creamy mashed potatoes and a steamed veggie.

Peel potatoes.


Chop into even chunks.

Boil until fork tender.

Drain. Add back to pot and mash away.


Add milk, butter, salt, and pepper and whatever else you would like. What about the garlic that you had to discard in the Spaghetti Carbonara? (I saved mine in the fridge trying to figure out what to do with them, because it seemed like a waste to throw away.)

They are just so beautiful. Chop them up and throw them in.


And a perfect, comforting dinner is ready. Serve with beer or cider and enjoy.

MEATLOAF - Serves 4

Ingredients:
Meatloaf:
1 pound ground beef
1 teaspoon salt
¼ teaspoon ground black pepper
½ cup chopped onion
½ cup chopped bell pepper
1 egg, lightly beaten
1 14.5 ounce can of diced tomatoes with juice
½ cup quick-cooking oats

Topping:
⅓ cup ketchup
2 tablespoons brown sugar
1 tablespoon prepared mustard

Directions:
Preheat oven to 375 degrees F.

In a large bowl, mix all meatloaf ingredients well and place in a glass 7 x 11 baking dish. Shape into a loaf.

In a small bowl, mix ingredients for topping and pour on loaf. Spread evenly and bake for 1 hour.

  1. I love that you put oats in your meatloaf! That's a great gluten free idea! Now I just have to figure out how to substitue the egg... would applesauce be weird?

    1. I have never done it with this recipe, but I have done it in cookies and it worked. Maybe decrease the brown sugar in the topping a little so that it doesn't get too sweet.
